Bhindi Do Pyaza

This is a really simple subzi. If you notice, my subzis are usually very simple for day to day cooking. My husband never liked the smell of garam masala, so I do not add too many spices in my daily subzis.


Prep Time: 10 mins

Cook Time: 20 mins


Ingredients

  • 1/2 kg Bhindi, chopped into cubes

  • 1 medium Onion, finely chopped

  • 1 large Tomato, finely chopped

  • Salt, to taste

  • 1 tsp Chilli powder

  • 1 tsp Coriander powder

  • 3 tbsp Oil

  • 1 tsp Cumin seeds

  • 1 tsp Turmeric powder

Instructions

  1. Microwave the bhindi for 4-5 minutes till it becomes soft

  2. In a pan take oil, splutter cumin seeds and turmeric powder

  3. Add the onions and saute till it becomes pink

  4. Add the tomatoes and salt and saute till it becomes mashy

  5. Add the chilli powder and coriander powder and mix well

  6. Add the bhindi to this onion-tomato mixture

  7. Once cooked and combined well, turn off the gas

  8. Garnish with coriander leaves and serve hot with rotis and dal
