Cauliflower, carrot, peas and Methi Subzi

This is a simple subzi but very tasty due to the tomato-methi leaves combo. If you have frozen methi leaves, you can make it along with your favorite vegetables.

Ingredients

  • 1 & 1/2 cups Cauliflower chopped into florets

  • 1/4 cup cross sliced Carrot

  • 1/2 cup green peas

  • 1/4 cup cubed paneer (optional)

  • 1 Large tomato finely chopped

  • 1 cup finely chopped methi leaves

  • Salt, to taste

  • 2 tsps Amchur powder

  • 2 tsps Chilli powder

  • 1 tsp Coriander powder

  • 1 tsp Cumin powder

  • 2 tbspo Oil

  • 1 tsp Cumin seeds

  • 1 tsp Turmeric powder

Instructions

  1. Soak the florets in hot boiling water with salt and turmeric

  2. In a pan add oil and splutter cumin seeds, add turmeric powder.

  3. Add the chopped tomatoes and cook till mushy

  4. Then add the methi leaves, salt and saute for another min

  5. Microwave carrots till it is semi cooked

  6. Add all the vegetables in the tomato mixture, cover and cook till done

  7. Add the chilli powder, coriander and cumin powders and mix well

  8. Serve hot with phulkas
