Milk Payasam

This kheer is generally made on more South Indian occasions from a wedding to a festival to a simple occasion at home.


Cook Time: 1 hr


Ingredients

  • 1 litre Full cream milk

  • 4 tbsp Rice

  • 1 and 1/2 cups Sugar

Instructions

  1. In a pressure cooker, add the milk

  2. Close the cookier and give 1 whistle (be careful as the milk tends to come out of the cooker and splash all around)

  3. Once the pressure is down, add the rice and give 2 whistles

  4. You will see that the payasam has become light pink in colour and a bit thicker

  5. Add the sugar, cook till it gets dissolved and switch off the flame

Notes

  • You can add cashew nuts but I usually do not prefer it.

  • Some people add cardamom powder for seasoning, I usually prefer the plain milk and rice smell.
