Sweet Lapsi (Broken Wheat)

Prep Time: 15 minutes

Cook Time: 30 minutes


I have made lapsi halwa before, but I used to cook the lapsi and then add jaggery.. The lapsi used to be a little hard, so this time I tried cooking the lapsi in jaggery water and this turned out to be super awesome!!


Ingredients

  • 1 cup Broken wheat

  • 1 tbsp Yellow moong dal

  • 1 & 1/2 cups Jaggery

  • 2 & 1/2 cups water

  • 1/2 cup coconut milk*

  • 1 tsp Cardamom powder

  • 3 tbsp slivered almonds

  • 2 tbsps raisins

  • 4 tbsps ghee



Instructions

  1. In a pan take the coconut milk, water and jaggery and bring to a boil till jaggery melts, switch off the gas and keep aside

  2. In a pressure pan, take 1 tbsp ghee and roast the almonds and raisins till raisins bloom and almonds become brown, keep aside

  3. In the same pan, add the remaining ghee and roast the broken wheat and moong dal till it becomes well roasted and golden brown

  4. Add the jaggery water, stir well and close the pan, cook this on high flame for 1 whistle and switch off the flame, wait for the pressure to go down itself

  5. Once done, fluff it with a fork, add cardamom powder and garnish with the dry fruits

  6. Serve warm


*Notes : If you do not want to add coconut milk, you can add 3 cups water
