Badam (Almond) Kheer

Badam Kheer is considered a rich man’s kheer as almonds are expensive and you cannot really afford to have it like any other kheer. So it is usually made only for a few festivals or occasions, and not as a dessert for invited guests.I tried this recipe and absolutely loved it! I made it a bit rich by adding mawa but it ended up being a little heavy.


Prep Time: 1 hr

Cook Time: 1 hr


Ingredients

  • 1/2 cup Almonds

  • 3 and 1/2 cups Full cream milk

  • Full cream milk, to make paste

  • 5 Saffron strands

  • 1/2 cup Sugar

  • 1 tsp Cardamom powder

  • Slivered pistachios, for garnish

For instant mawa

  • 1/4 cup Milk powder

  • 3 tbsp Water

Instructions

To make mawa

  1. Mix the water into the milk powder and make a paste

  2. Microwave this for 2-3 minutes till you can crumble it and keep aside

To make the kheer

  1. Soak the almonds in hot boiling water for an hour, remove the skin and make a fine paste with a little milk. Keep aside.

  2. In a heavy bottom saucepan, add milk and start boiling

  3. Add saffron and keep boiling till it reduces to 2/3

  4. Add the almond paste and boil for 5 more minutes

  5. Add the crumbled mawa and cook for 2-3 minutes

  6. Add the sugar and boil for another minute

  7. Switch off and add cardamom powder and the slivered pistachios

  8. Serve chilled

Notes

  • Be generous with saffron as almond has a very bland and not so pleasant smell

  • This kheer smells and tastes best when chilled and on the next day
