I am not a huge fan of blueberries and blueberry muffins. I always felt like these berries did not have a taste. But I wanted to try these muffins since they make a good breakfast snack and the texture is really nice.

Prep Time: 15 mins

Cook Time: 25 mins

Ingredients

  • 1 and 1/2 cups Maida

  • 1 tsp Baking powder

  • 1/2 tsp Baking soda

  • 1 cup Blueberries

  • 1/2 cup Powdered sugar

  • 1/4 cup Oil

  • 1 cup Hot milk

  • 1 tsp Vanilla essence

Instructions

  1. Whisk together maida, baking powder and soda

  2. Take a tbsp of maida in a cup and add the blueberries, mix well (this is to avoid sinking)

  3. Beat oil, sugar and milk together well

  4. Add vanilla essence and mix well

  5. Add the dry mixture and cut and fold gently

  6. Lastly add the blueberries and mix once more

  7. Line the muffin trays with muffin paper of silicon moulds and pour the batter to a little more than 3/4

  8. Tap it once and bake in a preheated oven at 180 degrees C for 20-25 minutes keeping a watch
