Eggless banana Muffins with Jaggery

This recipe started as a trial without any interest only because I had over ripe bananas but my colleagues daughter loved it so much that she asked me to make it again, so for me, this recipe is for keeps!!


Prep Time: 15 minutes

Cook Time: 25 minutes


Ingredients

  • 2 over ripe bananas

  • 1/2 cup jaggery powder

  • 1/2 cup curd

  • 1 tsp vanilla essence

  • 1/2 cup wheat flour

  • 1/2 cup oat flour

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 cup chopped walnuts

  • 1/4 cup chocolate chips (preferably mini)


Instructions

  1. Mash the bananas well

  2. Add in the jaggery powder and beat it well

  3. Then add the curd, vanilla essence and oil and beat it once again mixing well

  4. Add in the flours, baking powder, soda, a pinch of salt ang gently fold it into the wet mixture

  5. Finally add the chopped walnuts and chips and mix it one last time

  6. Scoop out the batter into silicon muffin moulds lined in a muffin tray

  7. Top it with some more chocolate chips, bake them in a 180 degree preheated ocen for 18-22 mins or till the toothpick comes clean

  8. Cool and remove them, enjoy
