Eggless Kesar Pista cake

This is a lovely tea cake, whenever you dont want to indulge in any chocolate or vanilla cake, try this one and you will get reminded of indian sweets
Ingredients
100 gms softened butter
3/4 cup powdered sugar
3 tbsp milk in which 10-15 strands saffron has been infused
1 cup luke warm milk
2.5 tbsp lemon juice or 2 tsp vinegar
1 tsp baking powder
1/2 tsp baking soda
1/2 tbsp cardamom powder
1.5 cups maida
1/4 cups chopped pistas for topping
Instructions
In a cup take milk and add in vinegar or lemon juice, mix and let it curdle
Soak the saffron in milk and keep aside
In a large mixing bowl, cream the butter and sugar till light and airy
Add in the saffron milk and the curdled milk and beat it well
Now fold in the Maida, cardamom powder, baking powder and soda and mix in gently till it becomes a smooth batter
Pour this into a greased loaf tin, top it with chopped pistas and tap it
Bake this in a preheated oven at 180 degrees for 30-35 mins till the tooth pick comes out clean.
Cool completely and then slice it
