Eggless Saffron Cookies

These cookies are very tasty and the main taste and aroma buster is the saffron. Make sure to keep a watch when you are baking as you do not want to over-bake the smell in this cookie.


Prep Time: 10 mins

Cook Time: 12 mins


Ingredients

  • 1 and 1/2 cups maida

  • 1/2 cup Powdered sugar

  • 2 tbsp Warm milk

  • 7-8 saffron strands

  • Slivered pistachios, for garnish

  • 1 tsp Cardamom powder

  • 1/2 cup Ghee

Instructions

  1. Soak the saffron in warm milk and keep aside

  2. In a mixing bowl, cream ghee and sugar till it becomes white and airy

  3. Add the maida and the cardamom powder and mix well

  4. Add the milk little by little and make a smooth dough

  5. Try to roll into a thick roti and cut into cookies (if it is hard to roll make balls and flatten them)

  6. Garnish with pistachios and bake for 10-12 minutes at 160 degrees C, taking care not to burn them
